Belgian Waffles In Banana’s Foster Delight

A fantastic recipe for those special mornings or when you have a house guest you would like to impress. Follow this simple recipe for a 5 star breakfast.

INGREDIENTS

1 1/3 cups of all -purpose flour

3/4 teaspoon of baking soda

2 teaspoons baking powder

2 teaspoons white sugar

1/4 teaspoon salt

3 eggs

1 1/2 teaspoons of vanilla extract

1 1/3 cups milk

1/3 cup melted butter

_________

1/4 cup of butter

2/3 cup brown sugar

2 teaspoons rum flavored extract

2 teaspoons vanilla extract

1/2 teaspoons of ground cinnamon

1/4 cup whole pecans

1/2 cup pancake syrup

3 bananas, cut into 1/2 inch slices

1 cup heavy cream

1/4 teaspoon vanilla extract

1 tablespoon confectioners’ sugar

Here we go……

1.   Preheat your belgian waffle iron. Whisk flour, baking soda, baking powder, white sugar, and salt all in one bowl, put to the side.

2.   Whisk eggs,1 1/2 teaspoons vanilla extract, and milk in a bowl. Stir in your melted butter and flour mixture ( from #1) until slightly lumpy batter forms.  Cook belgian waffles on your preheated waffle iron for about 2 minutes , or until steam stops.

3.   Melt 1/4 cup of butter in a saucepan over medium heat. Now stir in your brown sugar,rum extract,2 teaspoons vanilla extract,and cinnamon. Bring to a simmer and stir in your pecans -continue simmering for 1 minute. Stir in the pancake syrup and bananas, continue cooking until your bananas soften, around 4 minutes.

4.   Beat the heavy cream, 1/4 teaspoon of vanilla and confectioners’ sugar with an electric mixer in a medium bowl until firm peaks start to form.

5.   Now that your waffles are done, spoon your Banana’s Foster sauce over the waffles and top them with whipped cream.

Your 5 star breakfast is going to have everyone full, smiling and praising your skills in the kitchen.

4th of July Cocktails!!!

red white and blue cocktail Fourth of July is around the corner! Time for parties and BBQ’s to fire up! Want to impress the adults this 4th? How about two sensational cocktail recipes that were found on the recipe cards at Publix Grocery Store. These red white and blue drink recipes are a hit, and the names will have everyone in the spirit!

Red,White,and Blue Cocktail

Ingredients

1 oz of rum

2 oz pina colada mix

1 cup of crushed ice

2 oz red grenadine

1/2 oz blue curacao

To Mix

1. Pour rum, pina colada mix, and ice into blender. Blend.

2. Pour grenadine into a tall glass.

3. Add the blended pina colada mix on top; then pour the blue curacao over top

4th of July Shooter

Ingredients

1/2 oz grenadine

1/2 oz vodka

1/2 oz blue cuacao

Steps

1. Pour the grenadine into a shot glass

2. Float Vodka on top of the grenadine.

3. Float the blue caracoa on top of the vodka.

SuperBowl Margaritas

Super simple, super tasty, Superbowl perfect margaritas!

1 can frozen limeade

1 can beer

1 can 7 UP

1 can tequila

Use the limeade can to measure all ingredients.  Place in a bowl, pitcher or decanter.  Garnish with limes if you choose.  Pre- salt your guests glasses by wetting and dipping them in a dish of Margarita Salt.

Sip and enjoy!

Peanut Butter Pie

8 oz. cream cheese, softened

1 cup powdered sugar

2/3 cup creamy peanut butter

1/4 cup milk

1 teaspoon vanilla extract

1 cup heavy cream

1/2 cup mini chocolate chips

chocolate cookie pie crust.

Mix together the softened cream cheese, powdered sugar and peanut butter for 1 to 2 minutes. Add milk and vanilla extract and stir well.  In a separate bowl whip the cream to the soft peak stage.  Fold cream into peanut butter mixture.  Add the mini chocolate chips.  Pour mixture into the pie crust.  Freeze for 3 to 5 hours.  Let thaw slightly before serving.

A cold creamy easy dessert for a hot summer evening!

1.  For fluffier omelets, add a pinch of cornstarch before beating.
2.  A little salt sprinkled into a frying pan will prevent splattering.
3.  Meat loaf will not stick if you place a slice of bacon on the bottom of the pan.
4.  A few drops of lemon juice added to simmering rice will keep the grains separate.
5.  Thaw fish in milk. The milk draws out the frozen taste and provides a fresh-caught flavor.

Crock Pot Pork Tenderloin and Mashed Potatoes

I subscribe to an awesome web site called MenuForTheWeek.com. Here’s the scoop…Every Thursday you receive a week’s worth of recipes and a grocery list for less than $1 a week.  The recipes are kid, time and budget friendly.  No recipe has more than a 30 minute active prep time.

No more scrambling at 6 o’clock to pull together a meal.  Less STRESS, and much better family time.

1 2 lb pork tenderloin
3/4 cup red cooking wine (in the vinegar section)
1 envelope dry onion soup mix
1 cup water
1 can beef broth
4 cloves garlic – minced
**********************
6 red potatoes – skin on and cubed
1 teaspoon salt
1 teaspoon garlic powder
1/4 cup butter
1/3 cup milk

1) In a small bowl, combine first 5 ingredients.
2) Place tenderloin in the crock pot and pour mixed ingredients on top.
3) Cook for 6 hours on low. Use juice as gravy for tenderloin and mashed potatoes.

Thoroughly wash the potatoes. Cut into cubes and boil in a large pot until tender.
Drain and mash potatoes. Add salt, butter, garlic powder and milk. Mix well.

Holiday Jello Mold Recipes

Strawberry Banana Mold

2-3oz. boxes of strawberry or strawberry banana gelatin

1-10 oz. container of frozen strawberries

2 bananas cut into slices on a bias

Over 2 packages of gelatin pour 2 cups boiling water – stir to dissove.  Add berries to gelatin.  Let them thaw a little or just break them up with a fork.  Add one cup COLD water.  Add bananas.  Stir and place in bowl or mold.  Refrigerate til firm.

If you would like a topping, you can use the recipe below with strawberries and or bananas on the top.

Cranberry Mold

6 oz. raspberry jello

2 cups boiling water

8 oz. can crushed pineapple

1 can whole cranberry sauce

1/2 cup port or sherry

For topping:

8 oz. brick of cream cheese

8 oz. whipped cream

1/3 cup cran raisins

Pour 2 cups boiling water over raspberry jello.  Add pineapple and whole cran sauce- broken up by fork. Stir in the port.  Place in bowl or mold and refigerate until firm.

Add topping once jello is firm.  Whip the cream cheese and whipped cream together and spread over top.  Sprinkle cran raisins over it.

Sister’s Killer Chili

This is the chili cook-off winner!

Or so my sister says!  She saw my last chili post and wanted a cook-off.  I have made both recipes and would probably choose this one myself BUT the other recipe is just so darn easy to make with only 4 necessary ingredients.

We served this during the Superbowl last year and the pot was drained!

1 can hominy

1 can corn

1 can kidney beans

1 can Ranch Style Jalapeno Beans

1 pack ranch dressing mix

1 pack taco seasoning

1 can white corn

1 garlic bulb

2 cans diced tomatoes with jalapeno peppers

1 pound ground turkey

1 pound ground beef

Brown the meat and drain.  Mix all and cook in crock pot.

Chili Cookoff Winning recipe- 5 ingredients!

My girlfriend won a chili cookoff with this winning recipe.  I think she used only 4 of the  ingredients.  She says cumin is optional!

Ingredients

45 oz. Great Northern White Beans, canned – DO NOT drain

32 oz. salsa – I use Pace mild and medium

1 lb. chicken, cooked and diced

10 oz. Monterey Jack cheese, shredded or cubed

Dash of cumin, optional

Instructions

Cook chicken in oven, then cut into cubes OR, cut chicken and stir fry on stove.  Put cooked chicken aside. In a large pot, combine beans (entire cans, DO NOT DRAIN) and salsa.  Add cooked chicken and cumin. Simmer on low for about an hour.  In the last 10- 15 minutes add the cheese and stir to blend.

Serve with cornbread.  Also good served with extra cheese, sour cream and avocado as sides.

Easy Breakfast Smoothies

Blueberry Smoothie

Two Servings

• 1 pint fresh blueberries or 2 cups (10 oz.) frozen blueberries — slightly thawed
• 1 cup pineapple or orange juice
• 1 container (8 oz.) lowfat vanilla yogurt
• 2 teaspoon sugar

Combine all ingredients in your blender and blend until smooth.

Combine all ingredients in a blender and blend until smooth.

• 1 6-ounce can frozen orange juice concentrate
• 1 cup cold water
• 1 cup non-fat milk
• 1/3 cup sugar

• 10 ice cubes

Combine the first five ingredients in a blender; process at high speed. Add ice cubes, a few at a time, blending until smooth.
